I made this grilled shrimp, veggie and avocado recipe for dinner and it was soo good! It's one of my favorites. You spoon the mixure into butter lettuce or romaine lettuce leaves and eat up. Super healthy and satisfying!
Monday during work I went for a quick walk on doTERRA's grounds and the flowers were so pretty!
Monday night Mal and I went to yoga together at UVU. She is taking a yoga class and had a sub this week. Deni was my yoga teacher for years at BYU, but has since retired from teaching there. I miss her so much and it was incredible to be able to do yoga with her again. We did an Ashtanga flow class which got us sweating and limber.
That night we tried out Mooyah in Provo. They have a black bean veggie burger option, pluuus they make all of their buns fresh in house. The clarion call of that fact alone had me chomping at the bit to go.
▲Their fry portion sizes are super generous! I got medium sweet potato fries and it was plenty for Mal and I to share. I'm really picky about fries and both of their fry varieties were delicious.▲
▲The burger on the bottom is mine. They do such a good job of cooking the cheese on there too so it's kind of crunchy on the outside but still gooey. And the buns were definitely way good.▲

I went on a lunchtime hike with my friends and coworkers Emily and Julia. Emily was awesome and totally lent me her workout clothes (right down to the socks and shoes) so I could come. I felt so included. :)
We finished our hike just in time. As we were leaving the winds picked up and later on that day it looked like this:

After yoga we went to Happy Sumo with our friends Cameron, Chelsie, and Paul for half-price sushi.

Following sushi we blogged about our GIVEAWAY HAPPENING NOW and Evie creeped in the corner.
She was also incredibly cute and came and hung out next to me as I worked. I kept looking at her and giggling.

I left Bombay House just feeling so grateful for and blessed by the presence of these women in my life. Each one of them is so special and has their own unique way of making me happy. I just love them sooo much!! I got to thinking that if I loved them so much my own little heart was bursting over it, how does God feel about loving all of us? It must be a truly stupendous love.
Saturday morning after barre class I visited Hruska's kolaches since I'd been dying to try them after hearing about the place a few weeks ago. Wikipedia describes kolaches thusly: "A Kolach (plural kolache /kɵˈlɑːtʃi/, also spelled kolace, kolach, or kolacky, from the Czech and Slovak plural koláče, sg. koláč) is a type of pastry that holds a dollop of fruit rimmed by a puffy pillow of supple dough." Yum, right?

▲The Ranchero was delicious- savory, each ingredient perfectly cooked (hard to do with egg especially)-- the only thing is that it was a tad too spicy for me. Be aware that I am a wuss.▲
▲The blackberry and the cream cheese were my favorites. They make everything out of fresh fruit and the flavor of those blackberries was just excellent. The dough itself is not very sweet, which allows the fruit itself to dance unfettered. The cream cheese they mix with cottage cheese, which gives it a really special taste and texture. I wanted SO MANY of those.▲
IMPORTANT: Hruska's is having a Kolache Fest from 9am-12pm Saturday, April 25th. For $6 you get to try everything they have (which is a lot)! I'm going at 11am right after I get out of barre, so if you want to come please let me know and we can partake in sweet kolache comradrie!

That night I went up to Salt Lake with my friends Cameron and Anni. We ate dinner at one of our favorite places, Vertical Diner. Sadly we didn't get any pics of all three of us, but here's Anni and me.

. . ▲Cameron got this sexy Peanut butter brownie sundae that was really tasty. I gotta have my brownies a certain way, and with the exception of a crusty bottom, the brownie was chewy and fudgey.▲
